Well done to A. Diamond, a 5th year Home Economics student, who recently represented Scoil Mhuire as a finalist in the “All Island Final of the Healthy Home Chef Cookery Competition”.

She worked hard to prepare her favourite healthy home cooked nutritious and affordable meal (main course dish only) for two people.

The competition is open to all students in post-primary schools on the island of Ireland and Youthreach centres in the Republic of Ireland.

Her recipe was chosen as one of the final 16 out of 589 applicants in the Senior category.

She cooked: A Turkey burger with a side of sweet potato fries, her own healthy coleslaw, Guacamole and pickled cucumber.

The competition took place in St. Angela’s College of Education Sligo on 19th April 2023. The competition was judged by a panel of experts from St. Angela’s College including award winning chef and Home Economics Ambassador Nevin Maguire.

She showed excellent skills using healthy sustainable locally sourced food. She received a medal and signed copy of Nevin Maguire’s cookbook.

Well done to all the students from Scoil Mhuire who entered the competition.
